Recipe Testing

We love the classics but sometimes an event calls for something a little more exotic or just plain fun, so we are diving into some recipe testing to find some delicious new flavour options to share with our clients.

When you own a small business, your friends and family are an invaluable resource if not always a willing one. But when your request goes along the lines of 'would you mind tasting some new cake flavours?' everyone is all about helping out!


I'm really looking forward to this round as I'm trying to pin down a light and fluffy coconut sponge recipe which will be super versatile pairing with everything from our fruity curds to our indulgent whipped chocolate ganaches.

This recipe is working wonderfully and I'm so excited about the potential for some really sophisticated flavour profiles we can create with this cake. In particular, a coconut and passionfruit crème brûlée inspired combination. Our delicate coconut sponge layers with a traditional crème patissière and a passionfruit curd makes for a refined and fresh take on the classic coconut cake, perfect for a elegant event on a summer evening.



Of course, coconut won't appeal to everyone. Most kids love a classic vanilla or chocolate cake but it's always nice to add in a little surprise for them when the cake is cut. Confetti cakes have become an Instagram staple over the years but often times it doesn't work out quite like the pictures when we try to make them here in the UK. Why? Well, because most of those cakes are made in the USA where they still use a number of additives that are now banned in the UK and EU. Our colourants tend not to react as well to being baked and either lose some of their vibrancy or just melt away completely. The good news is that's it's by no means impossible to achieve those picture perfect results.
